The other day I was at Cafe Kostverloren in Amsterdam for lunch. First got a beer and then ordered sweet potato soup with coconut. I really loved the soup and decided I should try to make it myself as well. Clueless about the ingredients besides sweet potato and coconut. But if you don’t try you are sure you are not going to succeed.
In my opinion, the coconut and sweet potato would combine perfectly with lime leaves and lemongrass. Thankfully, that was the case. Although different than at the cafe still delicious. Also easy to make what more can you ask for.
Sweet potato soup
Preparation 15 minutes, cooking time 30 minutes.
Ingredients 4 servings:
- 1 kilo of sweet potatoes
- 3 cloves of garlic
- 2 shallots
- 1 stalk of lemon grass
- 3 lime leaves
- 1 vegetable stock cube
- black pepper
- 900 ml of water
- 200 ml coconut milk
- fried onions (box at the supermarket)
- grated coconut
Instructions, sweet potato soup:
Peel the potatoes and cut them into coarse pieces. Mince the shallots and garlic. Bruise the lemon grass thoroughly.
Pour some oil into a soup pan and fry the onion for a few minutes until translucent, add the garlic and fry for another minute.
Pour in the water and add the sweet potatoes, lemon grass, lime leaves, stock cube, a little bit of salt and a few turns of freshly ground black pepper. Bring to a boil. When the potatoes are cooked (about 15 minutes) remove the lemon grass and lime leaves from the soup.
Use a hand blender to puree the soup. If you don’t own one, you can also use a normal blender or food processor. I will let the soup cool down first if you are not using a hand blender.
Add the coconut milk and stir it in. Add extra salt and freshly ground black pepper to taste.
Pour the soup into the bowls and garnish the sweet potato soup with the fried onions and grated coconut. Some people like to add extra coconut or onions so also place them on the table just in case.
