Obviously, pasta with bacon isn’t the most healthy recipe ever. However, sometimes you need to sin a little. The recipe is my husbands; we like to indulge ourselves so now and then with this dish. The recipe is easy enough to make. The only thing you need is a little bit of strength for mixing all ingredients into the pasta. That way you already lost some calories before you start dinner.
Pasta with bacon
prep time 30 minutes, cooking time 30 minutes
ingredients for 2 or 3 persons:
- half a packet of spaghetti (pack = 500g)
- 2 eggs
- 1 large onion
- 6 garlic cloves
- fresh Black Pepper
- 1 pack of smoked bacon approximately 130 grams
- 1 bunch of curly parsley
- piece Parmesan cheese (about 200 to 250 grams)
- 150 ml cream
- 250-gram chestnut mushrooms
Cut the onions, grate the garlic, cut the mushrooms into small pieces the same goes for the bacon. Grate the parmesan. Finely chop the curly parsley or use a food processor. In a bowl whisk together 1 egg, 1 egg yolk, cream and the parsley.
Bring water to a boil and cook the pasta according to the instructions. Generally, about 15 minutes. If you use fresh pasta, prepare the following first.
Add some olive oil to a frying pan and bake the onions with the garlic gently for a few minutes. Add the bacon and bake it on medium heat until the bacon pieces aren’t stuck together anymore. Insert the mushrooms and let it all simmer until the mushrooms are done. Add freshly ground black pepper (I add about 20 full rotations).
Drain the pasta, pour the pasta back into the pan. Add the egg and cream mixture to the pasta and mix everything together. Insert the grated parmesan cheese and stir it in thoroughly (keep a little bit of cheese aside). Add the content of the frying pan to the pasta and mix it in.
Divide the pasta with bacon over the plates, sprinkle the last parmesan over it. If you like some greens with it, serve a simple green salad on the side. I personally like some hard Italian garlic bread with it.
