Beet Salad with goat cheese and walnuts

Last week had some fries for dinner, I felt like adding something healthy on the side. So I decided to make a quick beet salad with goat cheese and walnuts. Tasty and easy to make. Didn’t use any salt in the beet salad, we enjoyed it without the salt. If you prefer to add salt, please do so. 


 Beet Salad

Preparation 10 minutes, cooking time 5 minutes.

 

Ingredients for 2 servings:
  • 500 grams of cooked beets
  • 125 grams goat cheese
  • 125 grams walnuts
  • balsamic vinegar
  • honey
  • olive oil

 Beet Salad


Instuctions Beet Salad:

Grate the beets with a coarse grater in a bowl. Crumble the goat cheese and chop up de walnuts, set 25 grams of whole walnuts aside for garnish.

Mix 3 tablespoons olive oil, 2 tablespoons balsamic vinegar and 1 tablespoon honey. Mix the beets with the cheese and walnuts (keep a little bit of cheese aside for garnish). Add the dressing to the salad and mix it in. 

Garnish the salad with goat cheese and walnuts.
